Holiday Yule Loaf or Ring


I find this the easiest….


1 c. chopped Macadamia nuts

1 c. chopped walnuts

1/2 c. slivered almonds

1/2 c. chopped pecans

1 c. chopped dates

1&1/2 c. candied fruit (pineapple, green & red candied cherries)

1/2 c. golden raisins

3/4 c. flour

3/4 c. sugar

1/2 tsp. baking powder

3 eggs

1 tsp. vanilla


Grease loaf or ring pan. Beat eggs slightly. Add vanilla and flour, sugar, and baking powder mixed together. Mix in nuts, dates, candied fruit, and raisins. Pour in loaf pan or ring and bake at 300 degrees for 1 1/2 hours for loaf – 45 to 60 minutes for ring, depending on size. Allow to cool, carefully remove from pan. Then wrap in apricot brandy soaked gauze. Wrap tightly in aluminum foil and keep refrigerated. I use a 2 in” roll of gauze for the ring. I let the cake soak for at least a month. Longer doesn’t hurt.
