Peanut Squares

Old family recipe…..

Golden Chiffon Cake:

2 cups flour

3 tsp. baking powder

1 1/2 cups sugar

1 tsp. salt

Sift all together and set aside

 

Separate 7 eggs. Make a well in dry ingreds. add 1/2 cup oil, 7 yolks, 3/4 cup cold water, 2 tsp. vanilla (grated lemon rind) Beat 3 min.

Whip egg whites and 1/2 tsp. cream of tartar. Beat very stiff. Fold egg mixture into whites. Bake at 350 degrees fro 30-35 min. in a greased 9×13 pan. Loosen first then invert  immediately.

Cut into squares and freeze at least overnight.

 

Frosting:

7 1/2 cups confectioners’ sugar

2/3 cup milk

2 tsps vanilla

1/8 tsp salt

6 cups finely chopped peanuts

 

Beat  confectioners’ sugar, milk, vanilla and salt until smooth.  Frost top and sides of frozen squares; roll in peanuts and place on wire racks to set. Makes 24 squares.
