Crustless Quiche with Spinach and Swiss Cheese

Prep Time 15 min / Cook Time 40 min / Serves 8
Ingredients:
Nonstick cooking spray
6 large eggs
¼ cup heavy cream
½ teaspoon minced garlic
3?4 teaspoon salt
¼ teaspoon black pepper
1?8 teaspoon ground nutmeg
1 (10-ounce) bag frozen chopped spinach, thawed and drained
2 cups shredded Swiss cheese
1 cup diced cooked turkey, optional
1 tablespoon finely diced red bell pepper
Directions:
Preheat the oven to 350°. Spray an 8-inch square baking dish or 9-inch pie pan with nonstick cooking spray.
Whisk together the eggs, heavy cream, garlic, salt, pepper, and nutmeg.
Fold the spinach, Swiss cheese, and bell pepper into the egg mixture and then pour all into the prepared baking dish.
Bake 40 minutes, or until the top of the quiche is golden brown and a toothpick inserted into it comes out mostly clean. Let cool 5 minutes before serving warm, or serve chilled, if desired.
HELPFUL TIPS
This basic quiche recipe can be used to make any low-carb quiche by switching out the type of cheese or adding proteins such as diced ham or cooked bacon pieces.
Though it adds a step, I love to add sautéed diced yellow onion to this as well!
