Carrot Bread 

 

Sweet Breads Galore!

Ingredients

    1. 3 cups all-purpose flour
    2. 1 cup sugar
    3. 1 cup packed brown sugar
    4. 2 to 3 teaspoons ground cinnamon
    5. 2 teaspoons baking powder
    6. 1 teaspoon baking soda
    7. 1 teaspoon salt
    8. 3 eggs
    9. 3/4 cup orange juice
    10. 3/4 cup vegetable oil
    11. 1 teaspoon vanilla extract
    12. 2 cups grated carrots
    13. 1 cup (6 ounces) semisweet chocolate chips (optional)
    14. 1/2 cup coconut (optional)

 

Directions

    1. In a large bowl, combine the first nine ingredients. In a small bowl, beat the eggs, orange juice, oil and vanilla. Stir into the dry ingredients just until moistened. Fold in the carrots and chocolate chips.
    2. Transfer to two greased 8-in. x 4-in. loaf pans. Bake at 350° for 55-60 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks. Yield: 2 loaves.
          Philadelphia Cheese Icing

       

      8 oz. pkg. cream cheese (softened) ½ stick butter (melted)
      2 tsp. vanilla 1 box powdered sugar

       

      Cream together and spread over cooled cake or on slices of bread.

 

 

Can always use the traditional Cream Cheese Icing to spread on the bread if desired. Recipe follows.
