- 4 eggs
- 4 medium potatoes, peeled and grated or 2 cups refrigerated shredded potatoes
- 1 cup chopped onion
- 1/2 cup dry bread crumbs
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1-1/2 cup shredded cheddar cheese
- 8 bacon strips, cooked and crumbled

Directions
- In a small bowl, whisk eggs. Stir in the potatoes, onion, bread crumbs, salt and pepper. Pour into a greased 9×13 baking dish.
- Bake, uncovered, at 350° for 15 minutes for refrigerated potatoes or 35 min. for raw potatoes oruntil potatoes are tender. Top with cheese and bacon. Bake 5-7 minutes longer or until cheese is melted. Yield: 2 servings.
