Cheesy Potato Casserole

 

Cheese Is Good!

4 Servings Prep: 15 Min.  Bake: 35 Min.
      Ingredients

    1. 4 eggs
    2. 4 medium potatoes, peeled and grated or 2 cups refrigerated shredded potatoes
    3. 1 cup chopped onion
    4. 1/2 cup dry bread crumbs
    5. 1 teaspoon salt
    6. 1/2 teaspoon pepper
    7. 1-1/2 cup shredded cheddar cheese
    8. 8 bacon strips, cooked and crumbled

 

Directions

    1. In a small bowl, whisk eggs. Stir in the potatoes, onion, bread crumbs, salt and pepper. Pour into a greased 9×13 baking dish.
    2. Bake, uncovered, at 350° for 15 minutes for refrigerated potatoes or 35 min. for raw potatoes oruntil potatoes are tender. Top with cheese and bacon. Bake 5-7 minutes longer or until cheese is melted. Yield: 2 servings.
