Beddie-Byes

So easy and so very good…melt in your mouth good!

Ingredients

2 Eggs Whites beaten stiff

2/3 C. Sugar- Added slowly to egg whites

Fold in 1 pkg. Choc. Chips and 1 C. Chopped Nuts

Directions

Preheat oven to 350 degrees.  Drop from teaspoon onto foil-lined cookie sheet.  Turn oven off when you put the cookie sheet in and leave in overnight.  I do these at the end of a cookie baking day, that way the oven is preheated and ready to do.

Makes about 40 cookies.  Pop off foil and store in airtight container.

Site Updates

I just wanted to pop in to mention some recent updates (and disruptions) to the site. Some things like the main theme were broken but I’m pretty sure everything is fixed now.

WordPress has been upgraded to 3.4.1 and all of the themes and plugins have been updated too. The updated version of the stock Twenty Eleven theme broke the family pictures in the site header. I have fixed this problem… at least for the time being.

I cleaned up the right side content… since the categories section is so large now I thought it would be nicer to bump it down the page a little and instead bump Skype, ShoutBox and “Site Stuff” up the page so it would be quicker and easier to locate.

A few months ago we offered up a few polls but they weren’t used much so they have been hidden.

What else… hrm! Oh, I added the WordPress Jetpack Plugin which offers massive improvements over the stock WordPress installation. Some of the benefits include a Twitter feed widget (already on), social networking enabled comment system and tons more.

Finally we turned off the ability to scroll through the images in the site header since some users reported problems.

Strawberry Mallow Dessert Strawberry Mallow Dessert

4 Servings Prep/Total Time: 10 Min.

Ingredients

2 cups sliced fresh strawberries

2 teaspoons sugar

1 cup miniature marshmallows

1/2 cup sour cream

Directions

Place strawberries in a bowl and sprinkle with sugar; stir. Let stand for 5 minutes. Add marshmallows and sour cream; stir to coat. Spoon into dessert dishes. Yield: 4 servings.

Adjust recipe to meet the number of servings you need.

 

Our 46th Anniversary

I realized, just today, that we had a truly magnificent anniversary and I never even thought to share the joy with all our family and friends.

I uploaded pictures and a video of course, but that doesn’t begin to tell the whole story…..so here goes…..

Our 46th anniversary was on April 14 and our family really went all out to make it super special.  Our oldest son, Darren, and his wife Celine had invited us out to see the movie,  MIrror Mirror that afternoon.

Unbeknownst to us, as soon as we left the house, if became a buzz with the rest of the family took over.

When we arrived home later, there, spread before our eyes was a feast to beat all feasts.  Lots of delicious bar-b-q of all types and numerous side dishes.  What a treat that was not to have to do any of the preparations. We also discovered that we had a new and wonderful kitchen faucet installed. They really scurried around to get all this accomplished so quickly.

Then they lead us into the living room for the next surprise.  There, showing on our living TV, was a slide show of our lives set to music.  Needless to say the tears began.  What next you say? Well, in addition to all of this we were presented with 20 albums of pictures from the past which had never made into albums until now. This was truly a labour of love.

We all had a wonderful evening together….sharing memories, good food and great company.

There aren’t words enough to ever express the tremendous gratitude we feel toward our wonderful loving family.  We have been blessed in countless ways, but the most important gift of all is this great family we have.

So now you too know the story of what our anniversary was really all about!

 

Lemon-Pepper Brussels Sprouts

5 Servings Prep/Total Time: 25 Min.

Ingredients

2 pounds fresh or frozen brussels sprouts, thawed and halved

1 tablespoon butter

1 tablespoon canola oil

3 green onions, sliced

1 teaspoon lemon juice

1/2 teaspoon lemon-pepper seasoning

1/4 teaspoon salt

Directions

In a large skillet over medium heat, cook the brussels sprouts in butter and oil for 10-12 minutes or until tender. Add the green onions, lemon juice, lemon-pepper and salt; cook 1 minute longer. Yield: 5 servings.

Nutritional Facts3/4 cup equals 126 calories, 6 g fat (2 g saturated fat), 6 mg cholesterol, 227 mg sodium, 17 g carbohydrate, 7 g fiber, 6 g protein. Diabetic Exchanges: 2 vegetable, 1 fat.

 

 

 

Gratitude

Just want to let everyone in my life know that I am forever grateful for all their kindness and I feel so very blessed to have all of you around me at Christmas time and always.  My heart is brimming over with joy and happiness.  Looking forward now to a spectacular New Year with lots more time together.  God bless you all!!

Also need to mention a special appreciation for the hard work that my son Darren has done on this site to make it so user friendly and beautiful to look at as well.  The giving of his time and talent are a truly wonderful gift.  He and Jeff have enabled me to be a real computer user….without them, I would be totally lost.  So here’s to the techno wizards in my life!!

Crab Spread

Ingredients
  • 1 package (8 ounces) cream cheese, softened
  • 1 can (6 ounces) crabmeat, drained, flaked and cartilage removed
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon lemon-pepper seasoning
  • 1/4 teaspoon minced garlic
  • Paprika
  • Assorted crackers or vegetables
Instructions
  1. In a small bowl, combine the first six ingredients. To serve chilled, cover and refrigerate until serving. Sprinkle with paprika.
  2. To serve warm, spoon into a greased 3-cup baking dish. Bake, uncovered, at 375° for 15 minutes or until heated through. Serve with crackers or vegetables. Yield: 2 cups.
