These are delicious!
12 mushrooms, centers scooped out
Fill with 8 oz. cream cheese mixed with real bacon bits (Hormel), sliced green onions. Sprinkle with crushed pork rinds to replace bread crumbs.
Cook for 20 minutes in a 375 oven, or until mushrooms are cooked through and cheese is melted. I like to turn the broiler on for a few minutes at the end.
I plugged in the recipe and they are around 1 carb per mushroom.
Crush 1/3 to 1/2 bag of pork rinds. If using chicken, cut into bite-sized pieces. In small bowl, beat one egg and stir in one cup of water. Dip chicken pieces or pork chops in egg mixture and then in pork rinds. Fry in vegetable oil until brown on both sides. Turn heat down and continue cooking until meat is done.
Take two boxes of any flavor sugar-free Jello and dissolve in two cups boiling water. Set in refrigerator to cool slightly. Then add one cup heavy whipping cream. Allow to set completely and cut into cubes. I use a nine inch square pan for this amount.

Just follow directions on box but use amount of half-n-half shown above. We love this with cool whip for desert. Only 6-7 carbs.
Use any flavor sugar free jello you like, but use only half the water listed on the box. This makes a much more flavorful jello and satisfies the desire for fruit. Also it can be cut into squares and taken in lunch more easily. This makes a good desert with cool whip too.

In large, deep skillet fry pepperoni, then set aside. Dice onion and sauté in butter. Chop ham and bologna or other meats and fry in butter until well cooked and set aside. To onion mixture, add a couple splashes of soy sauce and 2-3 tbsps. Andria’s steak sauce and stir well. Now start layering. Put a layer of meats in skillet, then a layer of pizza sauce (about 1/3 -1/2 c.), then a layer of cheese. Repeat until all is used Bring to boil and reduce heat to medium. Stir well. Cover and simmer on low for 20-30 min. Stir every 10 min. or so to blend. This is good to eat hot, but is also good cold and is very filling. This recipe is easily adapted to whatever type pizza you prefer. Just use the meats you like best.

1 stick butter
Saute onion and green pepper in butter, stir in cabbage and continue cooking until cabbage is soft. Place slices of mozzarella cheese over mixture and cook until cheese is melted. This works good as a side dish or you can add bacon, mushrooms or grilled chicken to turn it into a meal in itself.
