CRUSTLESS PIZZA

2 pks. Hormel pepperoni

2 pks. Buttig Ham (2.5 oz. size)(optional)

6 slices thin sliced Oscar Meyer Bologna (optional)

Leftover roast beef(optional)

Leftover grilled chicken(optional)

Pork sausage (optional)

1 med. to lg. onion

Mozzarella cheese

Soy sauce

Andria’s steak sauce

Ragu Pizza Quick Sauce (2/3-3/4 c.)

Garlic powder

3-4 tbsps. Butter

In large, deep skillet fry pepperoni, then set aside. Dice onion and sauté in butter. Chop ham and bologna or other meats and fry in butter until well cooked and set aside. To onion mixture, add a couple splashes of soy sauce and 2-3 tbsps. Andria’s steak sauce and stir well. Now start layering. Put a layer of meats in skillet, then a layer of pizza sauce (about 1/3 -1/2 c.), then a layer of cheese. Repeat until all is used Bring to boil and reduce heat to medium. Stir well. Cover and simmer on low for 20-30 min. Stir every 10 min. or so to blend. This is good to eat hot, but is also good cold and is very filling. This recipe is easily adapted to whatever type pizza you prefer. Just use the meats you like best.

FRIED CABBAGE

One head green cabbage (1/2 head shredded)

One medium onion(chopped)

Green pepper(chopped)

Mozzarella cheese

1 stick butter

Saute onion and green pepper in butter, stir in cabbage and continue cooking until cabbage is soft. Place slices of mozzarella cheese over mixture and cook until cheese is melted. This works good as a side dish or you can add bacon, mushrooms or grilled chicken to turn it into a meal in itself.

STEAK-UM’S

One package frozen steak-um’s

One medium onion(chopped)

Green pepper(chopped)

Sliced mushrooms if desired

American and mozzarella cheeses

4 tbsps. butter

Fry steak-um’s according to package instructions. Place on micro-wave safe plate. In small skillet sauté onion and green pepper in butter add mushrooms if desired. Shred the steak-um’s and stir in the sautéed items. Layer American and mozzarella cheeses(as much as you want) onto the mixture and micro-wave until cheese is melted.

BAKED CHICKEN BREASTS

4 chicken breasts

4 slices mozzarella cheese

4-8 slices bacon (depends on how big the breasts)

Place chicken breasts (salted, peppered and garlic powdered) on broiler pan sprayed with Pam. Bake in 325 degree oven for 40 minutes. Remove from oven and turn breasts over. While chicken is baking, micro-wave bacon 20-40 seconds. Place 1-2 slices of bacon on each breast and place one slice of cheese on each. Return to oven and bake until cheese is melted.

TUNA MELT

2 cans white meat tune packed in water

Chopped onion

Micro-wave bacon

Mozzarella cheese

1 stick butter

American cheese

In large skillet melt butter and sauté chopped onion Stir in tuna. Micro-wave bacon for 50-60 seconds. Crumble over tuna and stir. Melt American cheese into mixture. Cover with mozzarella cheese and allow to melt.

ROAST BEEF

One 3 to 4 pound sirloin tip or chuck roast

One onion

Place small amount of water in pot. Put roast into water. Salt, pepper and garlic powder to taste. Bring to boil. Reduce heat and cook for 3-4 hours. In last hour put onion in with roast . Check frequently so roast doesn’t go dry. When roast is done, remove from pot and allow to cool. Shred meat and mix in juices in pot. Serve warm. This is also very good cold and served with sour cream for dipping. Saute one med. Onion and fry bacon to add to beef.  Works good for lunches.

ANDRIA’S PORK CHOPS

4 boneless center-cut pork chops

4 teaspoons Andria’s steak sauce

4 slices Mozzarella cheese

Line shallow baking dish with aluminum foil. Salt and pepper chops on both sides and place in dish. Bake at 325 degrees for 40 minutes. Remove from oven and turn over. Place one spoonful of sauce on each chop and cover with cheese. Return to oven for another five minutes or until cheese is melted. I use a toaster oven to do this.

ANDRIA’S CHICKEN

1.5 lbs. boneless/skinless chicken breasts cut into bite-sized pieces

1 medium onion finely chopped

1 sheet of pre-fried bacon micro-waved for 50-60 minutes

4 tablespoons Andria’s steak sauce

1 stick real butter

In small pan, sauté onion in 3tbsps. Butter. In large skillet, sauté chicken in rest of stick of butter. Salt and pepper and garlic powder to taste. Once onion is almost done add the steak sauce and allow to simmer. When the chicken is done combine the onion mixture with the chicken and stir. Alow them to simmer together. Crumble the bacon over the top of the chicken and serve. (I micro-wave one sheet of bacon while the chicken is cooking, for 50-60 seconds.)

VARIATION ON THIS RECIPE

You can do this with onion, green pepper and (if desired) mushrooms. Mix together with the chicken and melt mozzarella cheese over the top and serve. No Andria’s in this.
