Ingredients:
1 cup uncooked white rice (Riceland)
1 medium onion finely chopped
Chopped red and green pepper (optional)
2 cups chicken broth
3 or 4 tbsp. Lite soy sauce
8 oz. unsalted butter
Directions:
Melt butter in skillet. Combine onions and rice and cook in butter until browned. Add peppers, if desired, and stir in broth along with soy sauce. Bring to boil, cover and simmer for 25 min. or until liquid is absorbed.
Serve with pork chops or chicken. Another option is to cook some chicken ahead of time to create fresh broth and shred that chicken into the rice. Also fried bacon on boiled ham can be chopped and added to the rice to make a complete meal instead of just a side dish.
Serve with your favorite vegetable or a tossed salad.
